PROBLEM TO BE SOLVED: To provide a method for producing Chinese bamboo shoot (Dendrocalamus latiflorus) frozen and boiled plain, improved in the efficiency and quality by shortening a production time, including the natural fermentation of Chinese bamboo shoot, to facilitate the control of a fermentation condition etc., and to provide cooked Chinese bamboo shoot by this method.SOLUTION: In this method, ingredient pieces cut in rectangles after gnarls are removed therefrom are fermented naturally so that the fermentation is uniform and prompt, and thereby the control of the fermentation condition etc. is accurate.
