The present invention relates to a production method for a ginseng or red ginseng extract in which Rg3 ginsenoside is boosted, the production method comprising the step of processing with ozone during a procedure in which a ginseng or red ginseng extract is produced or the step of processing with ozone in a ginseng extract or red ginseng extract. The method of the present invention provides a ginseng extract, a red ginseng extract and red ginseng exhibiting increased physiological activity by substantially boosting the content of various ginsenosides while minimising reduction in the total saponin content. The production method of the present invention is relatively straightforward and allows for economic installation and erection in an industrial site, and can be made easy to use in the home as well. The ozone used in the present invention not only boosts ginsenoside but also exhibits a powerful sterilizing action due to a radical reaction and thus a hygienic product can be produced since harmful microorganisms are killed.
