The present invention comprising the above steps can obtain synergic effects of improving storability by inhibiting fatty acidification of meat by the activation of biologically active materials contained in pine nut extracted water while shear stress, texture, fatty acid composition, etc for meat quality are enhanced by the action of microorganisms contained in the probiotic.
