PURPOSE: A ginseng fermented product containing an organism converted compound K, a producing method thereof, and functional ginseng rice wine using thereof are provided to enable saponin inside ginseng to be easily absorbed to human bodies. CONSTITUTION: A ginseng fermented product includes a saponin metabolite containing a compound K(20-O-beta-Dglucopyranosyl-20(S)-protopanaxadiol) obtained by organism converting saponin contained in ginseng using aspergillus oryzae as fermentation strains. The saponin is converted into the saponin metabolite by inserting the ginseng into a culture medium for the aspergillus oryzae.본 발명은 사포닌의 체내 흡수 증진을 위해 인삼 사포닌을 화합물K로 생물전환시킨 인삼 발효물 및 이의 제조방법, 그리고 이를 이용한 기능성 막걸리에 관한 것으로서, 더욱 상세하게는 생균제인 황국균을 이용하여 인삼을 발효시키고 발효과정에서 인삼 사포닌의 배당체 성분이 분해되어 우수한 생리활성 성분인 화합물K로 생물전환된 사포닌 대사체를 함유하는 인삼 발효물 및 이의 제조방법, 그리고 이를 이용한 기능성 막걸리에 관한 것이다.본 발명의 인삼 발효물은 황국균(Aspergillus oryzae KCTC6292)을 발효균주로 하여 인삼의 사포닌을 생물전환시킨 화합물K(20-O-β-D-glucopyranosyl-20(S)-protopanaxadiol)를 포함하는 사포닌 대사체를 유효성분으로 함유한다.
