PURPOSE: A method for processing rice for making takju(coarse liquor) is provided to remove factors which cause water contamination and to shorten rice processing time. CONSTITUTION: A method for processing rice for making takju comprises: a step of dry-washing rice; a step of adding the rice to a container and roasting while closing the container; and a step of opening the container and swelling the rice by 120-140%. A method for manufacturing takju comprises: a step of roasting the rice and pulverizing the roasted rice; a step of adding Aspergillus kawauchi or Aspergillus niger and water to the roasted rice and preparing ipguk(Japanese koji); a step of adding yeast and water to the ipguk and preparing crude liquor; a step of adding ipguk and water to the crude liquor, and fermenting as first mashing; a step of adding one of the roasted rice and pulverized roasted rice, nuruk(fermentation starter), and water and fermenting; and a step of adding a sweetener and water, and filtering.
