Disclosed is a processed cheese, characterized by a blend of a starting cheese material that includes natural cheese and a pre-cooked cheese and has been heated at a high temperature of 110 degrees C or above together with all other ingredients, wherein the high temperature heated starting cheese material is contained in an amount of 1 to 50 percent by weight of the processed cheese. Also disclosed is a method of producing processed cheese, characterized the steps of: a. blending natural cheese with a pre-cooked cheese b. heating the blend formed in step (a) above to a high temperature of 110 degrees C or above to form a high temperature heated starting cheese material c. blending the high-temperature heated starting cheese material and all other ingredients, wherein the high-temperature heated starting cheese material is contained in an amount of 1 to 50 percent by weight of the processed cheese d. heating and emulsifying the blend formed in step (c) above.
