A preparation procedure a processed ginseng or processed ginseng extract having increased contents of the ginsenosides Rg3 and Rh2, the process comprising the steps of: (a) inoculating a strain of Aspergillus niger in a medium composed of ginseng and wheat bran； (b) cultivate the strain of stage (a)； (c) purify and concentrate the cultured material of step (b) by ultrafiltration； (d) separating an enzyme or enzyme solution from the purified and concentrated material from step (c)； (e) add the enzyme solution or the enzymes of step (d) to ginseng, red ginseng or an extract of ginseng or red ginseng to obtain a mixture； (f) ferment the mixture of step (e)； (g) separating the fermented material from step (f) by adding alcohol to obtain a supernatant； (h) concentrate the supernatant from step (g)； (i) reacting the concentrate of step (h) with at least one organic acid selected from the group consisting of acetic acid, lactic acid, citric acid, malic acid and tartaric acid； and (j) neutralize, add alcohol, filter, purify, concentrate and dry the reaction product of step (i).Un procedimiento de preparación un ginseng procesado o extracto de ginseng procesado que tiene contenidos incrementados de los ginsenósidos Rg3 y Rh2, comprendiendo el procedimiento las etapas de: (a) inocular una cepa de Aspergillus niger en un medio compuesto de ginseng y salvado de trigo； (b) cultivar la cepa de la etapa (a)； (c) purificar y concentrar el material cultivado de la etapa (b) mediante ultrafiltración； (d) separar una solución de enzima o enzimas a partir del material purificado y concentrado de la etapa (c)； (e) añadir la solución enzimática o las enzimas de la etapa (d) al ginseng, ginseng rojo o un extracto de ginseng o de ginseng rojo para obtener una mezcla； (f) fermentar la mezcla de la etapa (e)； (g) separar el material fermentado de la etapa (f) mediante la adición de alcohol para obtener un sobrenadante； (h) concentrar el sobrenadante de la etapa (g)； (i) hacer reaccionar el c
