PROBLEM TO BE SOLVED: To provide a wash-free rice manufacturing method capable of manufacturing a large quantity of wash-free rice of an excellent and stable quality for a short time period, by injecting overheated steam of a high temperature to eliminate the rice bran left on the surface of polished rice quickly and reliably, and by performing a sterilization and egg-killing and insect-killing on the rice grain surfaces simultaneously.SOLUTION: A wash-free rice manufacturing method comprises the steps of: feeding overheated steam 2 of a high temperature into the inside of a duct 4 arranged vertically continuously pouring polished rice 3a or a material for non-polished rice 3 down from an upper portion of the duct 4 bringing the polished rice 3a into contact with the overheated steam 2 while falling down in the duct 4 thereby to remove the rice bran existing on the surface of the polished rice 3a and to perform sterilization, egg-killing and insect-killing simultaneously and then discharging the polished rice 3a continuously from below the duct 4.COPYRIGHT: (C)2014,JPO&INPIT【課題】高温の過熱蒸気を噴射して精白米の表面に残存する糠を迅速かつ確実に除去するとともに、米粒表面の殺滅菌、殺卵、殺虫を同時に行い、良好で安定した品質の無洗米を短時間で大量に製造することが可能な無洗米の製造方法を提供することにある。【解決手段】本発明の無洗米の製造方法は、上下方向に沿って配置された管路4の内部に高温の過熱蒸気2を供給するとともに、管路4の上部から無洗米3の原料である精白米3aを連続して投入し、管路4の内部で精白米3aを落下させながら過熱蒸気2と接触させ、精白米3aの表面に存在する糠を除去すると同時に、殺滅菌、殺卵及び殺虫処理を行い、その後、管路4の下部から精白米3aを連続して排出している。【選択図】図1
