The present invention relates to a custard cream composition containing a kudzu vine ingredient and a method for manufacturing the same. More specifically, the present invention is to provide the custard cream composition containing a kudzu vine ingredient which has excellent viscoelasticity, has chewy texture, is sticky and fresh, and delays deterioration and a method for manufacturing the same. According to a first embodiment of the present invention, the custard cream composition includes 62-64 wt% of milk, 11.5-13.5 wt% sweetened egg yolk, 8.5-10.5 wt% of refined sugar, 8-10 wt% of starchy syrup, 3-7 wt% of kudzu vine powder, and 0.5-1.5 wt% of glycine.본 발명은 커스터드 크림 조성물 및 그 제조방법에 관한 것으로서, 특히 점탄성이 우수하여 식감이 존득하고 차지면서 산뜻하며, 아울러 변패 속도를 지연시키는 칡성분이 함유된 커스터드 크림 조성물 및 그 제조방법을 제공하기 위한 것이다.이를 위해 본 발명의 제1실시 예는 우유 62~64중량%, 가당난황 11.5~13.5중량%, 정백당 8.5~10.5중량%, 물엿 8~10중량%, 칡전분 3~7중량% 및 글리신 0.5~1.5중량%를 포함하는 커스터드 크림 조성물을 개시한다.
