PROBLEM TO BE SOLVED: To provide a method for producing boiled beans, drawing original deliciousness of beans, capable of finishing boiled beans soft, and effectively using hot spring water.SOLUTION: This method for producing the boiled beans comprises boiling beans in condensed hot spring water which is obtained by condensing hot spring water. It is preferable to use condensed hot spring water which is obtained by condensing alkaline hot spring water by 2-10 times, and boil beans after soaking in the condensed hot spring water for at least 3 h. The condensed hot spring water which is obtained by condensing alkaline hot spring water by 2-10 times is also provided as a solution for boiling beans.COPYRIGHT: (C)2009,JPO&INPIT【課題】豆本来の旨味を引き出し、かつ柔らかく仕上げることができる、温泉水を有効活用した煮豆の製造方法等を提供する。【解決手段】温泉水を濃縮して得られた濃縮温泉水で豆を煮る煮豆の製造方法とした。濃縮温泉水は、アルカリ性の温泉水を2~10倍に濃縮して得られたものを使用し、この濃縮温泉水に3時間以上豆を浸漬させてから煮ることが好ましい。また、上記課題は、アルカリ性の温泉水を2~10倍に濃縮して得られた、豆を煮るための溶液としての濃縮温泉水を提供することでも解決することができる。【選択図】図1
