PROBLEM TO BE SOLVED: To provide a frozen plum fruit without needs for posture where stress is applied to body such as half-sitting and capable of being manufactured without deteriorating excellent nutrient components which plum fruit has as much as possible and having excellent texture.SOLUTION: A manufacturing method of a frozen plum fruit is a method including (a) seasoning process for impregnating raw plum fruit into a seasoning liquid containing saccharides and seasoning it and (2) an instantaneous freezing process for instantaneously freezing the seasoned plum fruit. It is preferable that seasoning liquid Brix sugar content is 20 to 30%, the seasoning liquid contains organic acid, temperature at instantaneous freezing is -18 to -30°C.
