PROBLEM TO BE SOLVED: To provide an oil-in-water emulsified oil and fat composition which is excellent in heat resistance and can be used as a taste material giving a natural butter flavor to bakery foods, even when butter is used in a small amount or never used, and to provide a food using the same.

SOLUTION: There is provided the oil-in-water emulsified oil and fat composition containing a butter-originated oil-soluble ingredient and a whey-originated water-soluble ingredient, characterized in that an electric current potential on an AAE sensor is in an output range of 19 to 25 millivolt, and an electric current potential on a COO sensor is in an output range of 30 to 42 millivolt, when an aqueous solution diluted into 1 wt.% is measured with a taste-recognizing device, while comparing with a standard substance using a butter perfume. The oil-in-water emulsified oil and fat composition gives a natural butter flavor, and can be used for bakery foods and the like as a taste material sustaining the flavor.
