PROBLEM TO BE SOLVED: To provide a water-in-oil emulsified oil-and-fat composition with which natural butter flavor can be obtained in bakery food even when using a small amount of butter or no butter.
SOLUTION: The water-in-oil emulsified oil-and-fat composition contains 0.05-0.3 wt.% of a butter-originated oil-soluble component and 0.05-0.3 wt.% of a whey-originated water-soluble component in its total amount to make the bakery food.
