A hygienic fermentation equipment comprised of a mainframe having plurality of vertical and horizontal stainless steel bars connected perpendicularly to each other to form a square box, said mainframe is mounted on the fermentation boxes； a stand comprised of plurality of vertical steel bars connected vertically below the corners of mainframe, said stand support the fermentation boxes； and a plurality of fermentation boxes comprising of first fermentation box and second fermentation box both mounted at the upper portion of stand. The equipment is operated through loading the fermentation box to a predetermined depth and covered. Loaded materials are left undisturbed in first fermentation box for two days. Sweating are drained through the removable perforated floor and flows to the funnel bottom portion of first fermentation box right into the juice collection pipe, which is released through opening the attached valve at the end of the juice collection pipe. The fermentation equipment is for producing high quality fermentation and collection of sweating from cacao and other commodities. Simple in structure and easy to use which provides a cascading type fermentation made from stainless steel sheets, bars and other food grade metal parts which allow clean collection of by products that can be further processed into valuable goods.
