The present invention relates to a method for processing rice, and more specifically, to a method for producing rice coated with an ingredient of embryo bud of rice. One purpose of the present invention is to provide a method for processing rice which is capable of providing nutrients of unpolished rice while improving a taste of rice. Other purpose of the present invention is to provide a method for processing rice which enables the rice to contain ingredients of embryo bud of rice without requiring special processing methods such as vacuum packaging and others. A method for processing rice according to the present invention comprises: a step of steaming rice bran; a step of fermenting the steamed rice bran; a step of extracting the fermented rice bran; a step of secondly fermentation ripening a rice bran extract at low temperatures; a step of spraying the secondly fermented rice bran extract onto white rice such that the surface of the white rice is evenly coated with the secondly fermented rice bran extract; and a step of drying the coated white rice at a low temperature of 40°;C or less.본 발명은 쌀의 가공방법에 관한 것으로서, 미강을 찌는 단계, 찐 미강을 발효시키는 단계, 발효된 미강을 추출하는 단계, 미강 추출액을 저온에서 2차 발효 숙성시키는 단계, 백미에 상기 2차 발효된 미강 추출액을 분사시켜 백미의 표면에 고르게 코팅되도록 하는 단계, 40도 이하의 저온에서 건조시키는 단계로 이루어지는 것을 특징으로 한다.
