PURPOSE: Scorched rice containing dioscorea japonica, and a producing method thereof are provided to offer the scorched rice to eaters as a snack. CONSTITUTION: A producing method of scorched rice containing dioscorea japonica comprises the following steps: controlling the water content of washed rice at 25~30% before dehydrating the rice, and adding 0.1~10% of dioscorea japonica into the total amount of rice to steam the rice； and swelling the steamed rice with the dioscorea japonica for 3~5minutes at 160~170deg C for obtaining the scorched rice.본 발명은 마를 포함하는 누룽지 및 이의 제조방법에 관한 것으로서 보다 상세하게는 누룽지에 있어서, 마를 포함하는 누룽지 및 누룽지의 제조방법에 있어서, 수세, 침지 및 탈수한 쌀에 마를 첨가하여 밥을 제조하는 단계； 상기 마가 첨가된 밥을 팽화시켜 누룽지를 제조하는 마를 포함하는 누룽지의 제조방법에 관한 것이다.본 발명의 누룽지의 제조방법에 있어서 마는 분말형태 및/또는 액상형태의 제형으로 사용할 수 있다.
