An embodiment of the present invention provides a method for processing ginseng which comprises the following steps: preparing washed ginseng； liquid-packaging the ginseng in a pouch； and treating the liquid-packed ginseng at a pressure of 550 to 600 MPa for 30 seconds to 2 minutes. According to the present invention, active ingredients of ginseng, which can be extracted from ginseng as a solvent in a small amount during a super-high pressure treatment, can be prevented from being wasted.본 발명의 일실시예는 세척된 인삼을 준비하는 단계, 상기 인삼을 파우치에 액침포장하는 단계 및 상기 액침포장된 인삼을 550MPa내지 600MPa의 압력에서 30초 내지 2분 동안 초고압 처리하는 단계를 포함하는 인삼 가공방법을 제공한다.
