More particularly, it relates to a process for encapsulating an active ingredient such as preferably flavouring ingredients in or on an edible composition, the encapsulating material comprising empty yeast cells. Furthermore a food product containing said encapsulated active ingredient which is preferably in the form of a chewing-gum, a fried, baked or extruded product.
