PROBLEM TO BE SOLVED: To provide a method for manufacturing fractionally the oils and fats which are rich in a two-saturation and one-unsaturation-type triglyceride (an X2U-type triglyceride) as is more efficient and suitable for the industrialization.SOLUTION: The method comprises fractionating the oils and fats, which contains 20-60 mass% of the two-saturation and one-unsaturation-type triglyceride (an X2U-type triglyceride) consisting of two saturated-fatty acid residues and one unsaturated-fatty acid residue among the whole triglycerides, in the presence of 1-50 mass% of the fatty acid lower alkyl esters containing 10-100 mass% of unsaturated fatty acid lower alkyl esters, thereby obtaining the oils and fats rich in the X2U-type triglyceride.COPYRIGHT: (C)2010,JPO&INPIT【課題】本発明は、2飽和1不飽和型トリグリセリド(X2U型トリグリセリド)に富んだ油脂の、より効率的で工業化に適した分別製造方法を提供することを目的とする。【解決手段】全トリグリセリド中に2つの飽和脂肪酸残基と1つの不飽和脂肪酸残基からなる2飽和1不飽和型トリグリセリド(X2U型トリグリセリド)を20~60質量%含有する油脂を、不飽和脂肪酸低級アルキルエステルを10~100質量%含有する脂肪酸低級アルキルエステル1~50質量%の存在下で分別し、X2U型トリグリセリドに富んだ油脂を得る。【選択図】 なし
