The present invention discloses an extract of Hericium erinaceus, which is obtained by a method including the following steps:performing an extraction process on the fruiting body of the Hericium erinaceus using ethanol as the extraction solvent, wherein the weight/volume ratio of the fruiting body and ethanol is 1:6 to 1:10, and obtaining a first extract by preforming a sonication treatment and collect the supernatant obtaining a second extract by performing a filtering process to the supernatant collected by performing a centrifugation process to the first extract removing the ethanol in the second extract by rotary vacuum concentration, and removing the water in the second extract by vacuum freeze evaporation to obtain the extract of Hericium erinaceus.The extract of Hericium erinaceus is able to perform an anti-atherosclerosis effect.本發明揭露一種猴頭菇萃取物,其係藉由包含下列步驟之方法所取得:使用乙醇作為萃取溶劑,對猴頭菇子實體進行萃取處理,其中猴頭菇子實體加入乙醇之重量體積比為1:6至1:10,並經超音波震盪處理後取其上清液,而獲得第一萃取物;對第一萃取物進行離心處理後取其上清液,並經過濾處理後獲得第二萃取物;以真空減壓濃縮去除第二萃取物中的乙醇,再經冷凍真空乾燥去除第二萃取物中的水分,而獲得猴頭菇萃取物。該猴頭菇萃取物具有抗動脈粥狀硬化之功效。S10~S16‧‧‧步驟
