The present invention provides an anti-oxidant extraction method, which comprises following steps: performing a puffing process, that is, placing powders of dried vegetables or fruits into a pop rice machine to puff as a first product under determined temperatures and pressures, and grinding the first product as a second product performing a first extraction process, that is, adding ethanol to the second product to form a mixture, centrifuging the mixture after vibration to obtain a first supernatant and a precipitate and drying the first supernatant to obtain an extract.  Additionally, a second extraction process may be further performed, that is, adding pure water to the precipitate after fully volatilization of ethanol to form another mixture, centrifuging the another mixture after vibration to obtain second supernatant and drying the second supernatant to obtain another extract.  The method provided in present invention may have product with higher yields, and increase the anti-oxidant activity and stability of the extract.本發明提出一種萃取抗氧化物之方法,其包含下列步驟:進行一膨發過程,係將粉末狀經乾燥後之蔬菜或水果置入爆餅機裡,以預定溫度和預定壓力膨發成第一產物,再進行粉碎以形成第二產物;進行第一萃取步驟,係將乙醇溶液加入該第二產物形成混合液,經過震盪器進行震盪後,離心並分離取得第一上清液及沉澱物;以及將第一上清液經過乾燥處理後獲得萃取物。另外可再進行第二萃取步驟:係將沉澱物於乙醇揮發完全後加入純水形成另一混合液,震盪後離心以取得第二上清液;以及將第二上清液乾燥處理,以得另一萃取物。本發明提供之方法可得較高產率之產物,並提高其抗氧化活性及抗氧化穩定度。S11~S14‧‧‧步驟
