The invention relates to extracts of fermented beans with anti-inflammatory activities. Beans were soaked in water and sterilized under high temperature and high pressure. When the beanswere cooled, Bacillus subtilis is added into the bean soup to ferment. Finally, the fermented beans were extracted, which have anti-inflammatory activities.
