The invention relates to extracts of fermented beans with antioxidative activities. Beans were soaked in water and sterilized under high temperature and high pressure. When the beans were cooled, Bacillus subtilis and sugar were added into the beans to ferment. Finally, the fermented beans were extracted, which have antioxidative activities. Furthermore, the invention relates to a method for production of extracts of fermented beans and composition thereof.本發明提供一種豆類發酵萃取物,其係以下列步驟所得:將豆類浸泡於水中經高溫高壓滅菌,以形成豆類基質。使豆類基質冷卻後,加入枯草桿菌(Bacillus subtilis)及糖類進行發酵製程,以獲得發酵產物。對發酵產物進行萃取製程,此豆類發酵萃取物具有抗氧化活性。本發明另提供一種前述豆類發酵萃取物之製造方法及其組合物。110‧‧‧步驟120‧‧‧步驟130‧‧‧步驟140‧‧‧步驟141‧‧‧步驟142‧‧‧步驟
