PROBLEM TO BE SOLVED: To provide a new method for producing clathrate of the components of derived from hop and cyclodextrin.SOLUTION: In the production method of clathrate, the components derived from the hop is clathlated in the cyclodextrin. The components derived from the hop coexists in the reaction system for creating the cyclodextrin by the reaction of cyclodextrin glucanotransferase and substrate. The method for producing foods containing the components derived from the hop is also disclosed.
