PURPOSE: Germinated barley with improved gamma-aminobutyric acid content, and a producing method thereof are provided to offer excellent palpability of the germinated barley to users by water-soaking and germinating barley in the constant condition. CONSTITUTION: A producing method of germinated barley with improved gamma-aminobutyric acid content comprises the following steps: soaking barley in water at 24-26 deg C for 22-26 hours; and germinating the barley at 14-16 deg C for 34-38 hours. The barley is glutinous barley.본 발명은 보리를 24~26℃에서 22~26시간 동안 수침하는 단계; 및 상기 수침한 보리를 14~16℃에서 34~38시간 동안 발아시키는 단계를 포함하여 제조하는 것을 특징으로 하는 감마아미노부티르산(gamma-aminobutyric acid) 함량이 증진된 발아 보리의 제조방법 및 상기 방법으로 제조된 발아 보리에 관한 것이다.
