The present invention relates to a granular amino acid seasoning composition with an acidic amino acid and a basic amino acid whose particle size is between 40 and 1000 &mu；m and distribution is between 65 and 99%, and a manufacturing method thereof. In addition, the present invention relates to a method for reducing and solidifying moisture retention of composite amino acid seasoning. The composition of the present invention is made by mixing the acidic amino acid with a basic amino acid, controlling size and distribution of the particle in a certain range, thereby improving moisture retention and preventing moisture from being solidified.본 발명은 산성 아미노산 및 염기성 아미노산을 포함하고, 40-1000 μm 입도 크기를 가지며, 130-1000 μm 입자의 분포가 65-99%인 과립형태의 아미노산 조미료 조성물 및 이의 제조방법에 관한 것이다. 또한, 본 발명은 복합 아미노산 조미료의 함수율 저감 및 고결 억제 방법에 관한 것이다. 본 발명의 조미료 조성물은 산성 아미노산 및 염기성 아미노산을 혼합하고, 일정 범위로 입도 크기 및 입자 분포를 정교하게 조절함으로써 함습성이 개선되어 고결이 억제되는 복합 아미노산 조미료를 제공한다.
