PROBLEM TO BE SOLVED: To provide a noodle skin capable of achieving at high level, both improvement of a quality as a food product, such as texture, taste and nutrition, and improvement of functionality as a wrapping skin, and a noodle skin food product.SOLUTION: A multilayer noodle skin is obtained by laminating grain flour-containing sheet-like dough in two or more layers, and includes two layers having different compositions, including a layer which has relatively small content of wheat bran, containing 0-30 mass% of wheat bran based on the entire raw material flour in the layer, and a layer which has relatively large content of wheat bran, containing 20-90 mass% based on the entire raw material flour.
