PROBLEM TO BE SOLVED: To provide a method and device of Joule heating, inhibiting the quality deterioration of a foodstuff material in a continuous galvanic heating towards a fluid foodstuff material by heating to an appropriate temperature corresponding to the treatment by taking the whole of the foodstuff materials as objectives, extending the life of a ring-formed electrode and a spacer tubular body, enabling to execute easy cleaning in a suitable time and also as a result, preventing the crack formation.SOLUTION: This method of Joule heating having a plural number of electrode bodies and a plural spacer tubular bodies, installing the plural heating units formed with a heated flow passage at its inside and galvanic heating while flow-transporting the foodstuff materials in the heated flow passage is characterized by installing an electrode temperature sensor for measuring the temperature of the electrodes for each of heating units, and performing the control of the electric power supplied to the heating units based on the measured temperatures of the electrode temperature sensors.COPYRIGHT: (C)2009,JPO&INPIT【課題】流動性食品材料に対する連続通電加熱において、食品材料全体を目的とする処理に応じた適切な温度に加熱することで食品材料の品質低下を抑制し、環状電極およびスペーサ管体の寿命をのばし、洗浄を容易且つ適時に実施することを可能とし、ひいてはクラックの発生を防止することができるジュール加熱方法および装置の提供。【解決手段】複数の電極体および複数のスペーサ管体を有し、内部に被加熱流路が形成される加熱ユニットを複数設け、被加熱流路内で食品材料を流動移送させながら通電加熱するジュール加熱方法において、電極体の温度を計測する電極温度センサを加熱ユニット毎に設け、電極温度センサの測定温度に基づいて加熱ユニットに供給する電力の制御を行うことを特徴とするジュール加熱方法およびその装置。【選択図】図1
