The present invention relates to an apparatus for steaming and dehydrating crops using steam and cooling air. To this end, apparatus of the present invention comprises: a steaming drum including an insertion hopper and a release hopper formed at one side and the other side respectively, a transfer screw for transferring the crops inserted through the insertion hopper therein to the release hopper, and a steam supply part supplying steam； and a dehydration stand provided on the side of the release hopper so as to dehydrate the released crops. The steaming drum slants so that one side where the insertion hopper is formed and the other side where the release hopper is formed can have slope.본 발명은 일측과 타측 각각에 투입호퍼와 배출호퍼가 형성되고, 내부에 상기 투입호퍼로 투입된 농산작물원을 배출호퍼로 이송시키는 이송스크류와 스팀을 공급하는 스팀 공급부가 구비된 찜드럼； 및 상기 배출호퍼 측에 구비되어 배출된 농산작물원을 탈수시키는 탈수대；를 포함하여 구성되되, 상기 찜드럼은 투입호퍼가 형성되는 일측과 배출호퍼가 형성되는 타측이 경사를 갖도록 기울어진 형태로 구비되는 것을 기술적 특징으로 한다.
