The present invention relates to a method of manufacturing broth and mixing seasoning used in noodles, buckwheat noodles, cold noodles and hot noodles by using blueberry leaves as a main ingredient. The present invention relates to a method of applying blueberry leaves to broth and mixing seasoning so that functional cold noodles or buckwheat noodles good for health are able to be enjoyed at low costs by using a method of mainly using blueberry leaves rather than blueberry fruit, which is relatively expensive and less effective, and adding blueberry fruit as a sub-ingredient, in consideration that the antioxidation activity function of blueberry is not limited to the fruit and is able to be expected in the leaves, and that functional substances beneficial for the body are included much more in the blueberry leaves than the blueberry fruit. Especially, manufacturing costs are able to be lowered by using blueberry leaves, and the broth may include plenty of antioxidation substances accordingly. The intrinsic color and taste of blueberry are expressed by adding ground blueberry fruit or dried blueberry powder in the last process of the manufacturing method of broth. The functionality is reinforced without degrading the taste of the broth as the blueberry leaves have no stimulating taste. Blueberry fruit is used in the blueberry harvest season and dried blueberry powder on the market is used in the non-blueberry harvest season so that the color and the taste are also improved.
