PROBLEM TO BE SOLVED: To provide a processed eggplant in which the texture and flavor of an eggplant are retained, or a food comprising the processed eggplant, and a method of producing the same.SOLUTION: A raw eggplant is deep-fried at an oil temperature of 80°C or more and 100°C or less for 2 minutes or more and 10 minutes or less, and then is put in a container for heat processing, to obtain a processed eggplant.
