PROBLEM TO BE SOLVED: To provide a new method for approximating the quality of roasted coffee beans of robusta species close to the high quality of arabica species.SOLUTION: The method for modifying roasted coffee beans includes: i) a step of adding water to raw coffee beans and immersing the raw coffee beans in water for 1 to 5 hours for hydration ii) a step of treating the raw coffee beans under a high pressure of 50 to 200 MPa or more at 20 to 45°C for 10 minutes to 3 hours and iii) holding the produced raw coffee beans at 20 to 45°C for 20 to 50 hours. Due to the pressure treatment of the raw coffee beans and the subsequent enzyme reaction treatment within the coffee beans, roasted coffee beans having good flavor, with a higher quality, can be manufactured.COPYRIGHT: (C)2015,JPO&INPIT
