The present invention relates to a method for germinating coffee green beans using magnetized water. Specifically, magnetized water is prepared by treating general water with magnetic force and far-infrared radiation simultaneously, and then the coffee green beans are washed with the magnetized water. Then, the coffee green beans are immersed in the magnetized water while the moisture, temperature, and pH are maintained at the optimum levels. Thus, the germinating time of coffee beans can be effectively shortened and the germinating ratio can be significantly increased. The present invention can be useful in economically producing germinated coffee for a short period of time.
