PROBLEM TO BE SOLVED: To provide a pasty food having flavor and color of fruit wine and produced from squeezed lees of fruit wine, improving the utilization degree of the squeezed lees of fruit wine, and containing a lot of functional components such as antioxidant substance.SOLUTION: The pasty food is produced by crushing the squeezed lees of fruit wine containing a prescribed amount of seeds together with the seeds to obtain pasty crushed material having an average grain diameter of ≤0.5 mm, and adding sugar to the same to have sugar concentration of 30-40 wt.%.【課題】果実酒の搾汁滓から果実酒の風味と色合いを備えた食品を得るにあたり、搾り滓の利用度合いを高め、抗酸化物質などの機能性成分が多く含まれるようにする。【解決手段】所定量の種を含有する果実酒の搾汁滓を種ごと破砕して平均粒径0.5mm以下のペースト状破砕物を得、それに加糖して糖濃度30~40wt%のペースト状食品を製造する。【選択図】図1
