The present invention relates to a madeleine cookie containing a dandelion enzyme resolvent and a preparation method thereof, and more specifically to a cookie which is prepared by obtaining an extract by crushing the stems or leaves of dandelion and by using a dandelion enzyme resolvent manufactured by a treatment of cell wall degrading enzyme so that the cookie has improved color, taste, and scent with excellent mechanical properties. In addition, since users can intake useful ingredients in the dandelion, the cookie can contribute to users′ health.본 발명은 민들레 효소 분해물을 함유하는 마들렌 쿠키 및 이의 제조방법에 관한 것으로, 민들레의 잎 또는 줄기를 마쇄하여 다채즙을 얻고, 세포벽 분해 효소로 처리하여 제조된 민들레 효소 분해물을 이용하여 색, 향 및 맛이 향상되고, 기계적 물성이 우수하며, 민들레의 유용성분을 함께 섭취할 수 있어 건강 증진에 기여할 수 있는 쿠키에 관한 것이다.
