The present invention relates to a method for controlling a multi-stage cooker, of which the purpose is to prevent the corrosion of a cooker as well as to enable clean cooking by removing scale in using the multi-stage cooker. The method for controlling a multi-stage cooker comprises: a cooking step of cooking foods； a warming step of keeping and warming up the cooked food at a constant temperature； a washing step of washing the inner wall of the multi-stage cooker through sprinkling by using a sprinkler from the upper part of the multi-stage cooker； and a scale-removing step of removing scale accumulated inside the multi-stage cooker. Accordingly, through the scale-removing step, scale generated in using the multi-stage cooker can be removed to enable clean cooking and prevent corrosion of a cooker. In addition, through a door closing detecting step included in the scale-removing step, removal of scale can be safely performed and through a water level detecting step, a boiling and heating step is performed after the water level is detected such that it is possible to prevent damage and deformation of the multi-stage cooker caused by overheating.
