PROBLEM TO BE SOLVED: To provide a method for producing cooked rice by intermittent heating by which taste and mouth feeling of cooked rice after cooking rice are improved and improvement of aging resistance can also be performed by devising heating conditions in a cooking process.SOLUTION: In this method for producing cooked rice by intermittent heating, in which process of cooking rice is carried out intermittently in a plurality of steps, heating is once interrupted during cooking process for cooking rice by heating a rice-cooking pot containing rice and cooking water and at least one cooling step is carried out for 1 to 10 minutes at an inner temperature lower than the inner temperature during heating by 0.1 to 10°C. After the final cooling step, the final heating step is carried out to finish the rice-cooking process.COPYRIGHT: (C)2009,JPO&INPIT【課題】炊飯工程における加熱条件を工夫することによって炊飯後の米飯の食味や食感を向上させるとともに、老化耐性の向上も図ることができる間欠加熱による米飯の製造方法を提供する。【解決手段】炊飯時の加熱を複数回に分けて行う間欠加熱による米飯の製造方法であって、米と炊き水とを投入した炊飯容器を加熱することにより米を炊き上げる炊飯工程中に加熱を一旦中断し、炊飯容器内の温度を1~10分間で0.1~10℃下げる冷却工程を少なくとも1回行い、最後の冷却工程を行った後の最後の加熱工程で米飯を炊き上げる。【選択図】図1
