The invention relates to a method for manufacturing a tea extract, comprising the steps of: applying a methanol aqueous solution to extract a tea leaf and removing liquid to obtain a crude extract dissolving the crude extract in the water and degreasing to obtain a fat-free liquid regulating the pH value of the fat-free liquid between 2 and 3 to obtain an acidifying liquid and extracting the acidifying liquid by ethyl acetate and removing ethyl acetate to obtain the tea extract. The method for manufacturing the tea extract of the invention can effectively obtain extracted substances that are capable of eliminating free radicals. The method is suitably operated at the room temperature.本發明提供一種茶萃取液製造方法,其包含下列步驟:以甲醇水溶液萃取茶葉,再移除液體,以得到一粗萃取物;將該粗萃取物溶於水中,再經去脂得到一去脂液;將該去脂液的pH值調整至2~3,以得到一酸化液;及以乙酸乙酯萃取該酸化液,並移除乙酸乙酯,以得到該茶萃取液。該茶萃取液製造方法,能有效萃取出可消除自由基的物質,且適合在室溫下進行。
