PROBLEM TO BE SOLVED: To provide a method of manufacturing a Japanese cake containing chopped, pickled horseradish leaves mixed in rice dough of a soft round rice cake stuffed with bean jam.SOLUTION: A method of manufacturing a Japanese cake with chopped, pickled horseradish leaves, includes a first step (S12) for heat-treating a mixture of rice cake dough materials containing at least starch and sugars and water to form a rice cake dough, a second step (S14) for cooling the rice cake dough from room temperature to within a temperature range where moisture does not freeze, a third step (S15) for mixing chopped, pickled horseradish leaves into the rice cake dough and sealing the chopped, pickled horseradish leaves in the rice cake dough, a fourth step (S16) for wrapping bean jam in the rice cake dough to form a rice cake, a fifth step (S17) for freezing the rice cake, a sixth step (S18) for sealing while maintaining the frozen state of the rice cake, and a seventh step (S19) for freeze-storing the sealed rice cake. The third and fourth steps are carried out in a temperature condition at or lower than the room temperature. The chopped, pickled horseradish leaves contain solids large enough to provide actual eating feeling.
