Fresh poultry meat is preserved by packaging fresh poultry meat in a sealed package together with and pressurizing to an elevated pressure of from about 250 to 350 MPa pressure, maintaining the elevated pressure on the packaged fresh ground poultry meat for a time of from about 15 minutes and at a temperature of about 4 ℃. The non-synthetic antimicrobial is present in an amount effective to enhance the effectiveness of the application of the pressure to the packaged fresh poultry meat in reducing or eliminating pathogens.本發明係有關於一種利用高壓與檸檬香蜂草萃取物及其成分結合於新鮮肉類中之抑菌方法,檸檬香蜂草萃取物及其成分與高壓皆有抑制Escherichia coli O157:H7、Salmonella spp.的效果。當萃取物或其成分濃度增加至2%與高壓350MPa時,沒有細菌可以存活。如降低萃取物或其成分濃度與壓力時,將其貯存於4℃時,依舊有抑菌效果。結果顯示檸檬香蜂草萃取物或其成分結合高壓具有抑菌能力,可做為食品工業的抑菌方法。
