PROBLEM TO BE SOLVED: To provide a method for manufacturing a transparent oil-in-water type emulsion by a combination of materials which are acceptable as food without using a surfactant or emulsifying agent.SOLUTION: The method for manufacturing the oil-in-water type emulsion includes: obtaining a fatty acid by allowing a lipase which hydrolyzes two of the residues of three fatty acid to act on triglycerol fatty acid ester mixing water, the fatty acid, alcohol and a basic amino acid so that a mass composition ratio of the fatty acid to water is 1 or less and the mass composition ratio of the fatty acid to alcohol is less than 1 adjusting a pH of the base to the range of 6 to 8 and thereby, obtaining the oil-in-water type emulsion.COPYRIGHT: (C)2012,JPO&INPIT【課題】界面活性剤や乳化剤を用いず、食品として許容される材料の組み合わせによって、透明な水中油型エマルジョンの製造方法を提供する。【解決手段】トリグリセリン脂肪酸エステルに、その3つの脂肪酸残基の内の2つを加水分解するリパーゼを作用させて脂肪酸を得て、水と、前記脂肪酸と、アルコールと、塩基性アミノ酸とを、脂肪酸/水の質量組成比が1以下かつ脂肪酸/アルコールの質量組成比が1未満となるように混合し、系のpHを6~8の範囲に調整して水中油型エマルジョンを得ることを特徴とする水中油型エマルジョンの製造方法。【選択図】図1
