Extracting lipid components (A) from water-containing animal tissue comprises extraction with an alcohol that forms an azeotrope with water； filtering； washing the residue with absolute alcohol； filtering； combining both extracts and distilling out the aqueous alcohol mixture. An independent claim is also included for (A) prepared by the new process, containing omega -fatty acids (I), an antioxidant (II) and at most 0.5% alcohol.
