PROBLEM TO BE SOLVED: To provide a delicious and highly tasty unrefined sake vinegar drink which is low in calories and having not much unrefined sake odor and making the most of nourishing ingredients contained in the unrefined sake vinegar.
SOLUTION: The unrefined sake is produced by allowing boiled sweet potato to stand in the presence of rice koji and enzymatic ferments at a temperature range of 10-40°C to be saccharified and alcohol fermented. The ripened unrefined sake is distilled by a distillation machine and separated into unprocessed shochu and unrefined sake dregs. The unrefined sake dregs are compressed and filtered to be separated into a filtrate and a solid residue. The filtrate is recovered as unrefined sake vinegar. After the filtrate is filtered by a filter, erythritol is added. The adding amount of the erythritol represents 8-20 wt.% of the unrefined sake vinegar drink.
