PROBLEM TO BE SOLVED: To provide a method for making noodles which solves the problem that it takes very long time to make handmade buckwheat noodles or Japanese wheat noodles because of having need for kneading or levigating a mixture of cereal flour and water and also need for rolling the mixture into the flat one, and a thickening material needs to be added to the mixture because use of the pure cereal flour causes breakage when rolling the mixture, so as to make the noodles with only pure cereal flour without having no need for such kneading or levigating, and rolling.SOLUTION: The method for making the noodles includes: putting a slurry-like noodle material obtained by mixing the cereal flour with water at a ratio close to that of finished noodles into a steamer steaming the noodle material with steam generated in the steamer from above and below to harden the noodle material into plate-like noodles and cutting the plate-like noodles in an appropriate width to make the noodles.COPYRIGHT: (C)2012,JPO&INPIT【課題】 そばやうどんを手打で作る場合、穀粉と水を混ぜたものを捏ねたり練ったりするとともに、平たく延ばす延ばしを必要としていた。このため、非常に時間がかかっていた。また、純粋な穀粉では延ばしのときに切れが生じるため、つなぎを入れなくてはならなかった。このような捏ねや練り及び延ばしを必要としないとともに、純粋な穀粉だけで製麺ができるようにした。【解決手段】 穀粉と水をでき上がった麺に近い割合で混合したスラリー状の麺材を蒸し器に収容し、蒸し器内で発生した蒸気で麺材を上下から蒸すことで麺材を硬化させて板状麺とするとともに、板状麺を適当な幅に切断して麺とする。【選択図】 図1
