The present invention relates to a roll type potato pork cutlet which provides soft texture and juicy feeling when being chewed, facilitates carrying and taking to be simply enjoyed in substitution for gimbap or the like during outdoor activity as well as a space such as a restaurant, minimizes contamination by bacteria or the like in distribution, storage, thawing and cooking preparation processes of pork cutlet materials, a half-finished pork cutlet product and a finished pork cutlet product, and uniformizes filling of each cut portion when the pork cutlet having the filling disposed therein is cut to be taken to provide uniform taste; and a manufacturing method thereof. According to the present invention, the manufacturing method comprises a pork cutting step of slicing pork including a fat portion into a plurality of pork slices with the thickness of 0.6 to 1.0 mm and a forming step of forming the pork slices into pork for a roll shaped pork cutlet. The pork slices sliced in the pork slicing step include a fillet portion and the fat portion with the width of 5 to 10 mm on one side of an edge of the fillet portion.
