The object of the present invention is to provide a method of producing fish cake-chicken crackers which contain chicken meat and fish, and thus offer a unique flavor due to the combination of chicken meat and fish. To this end, the present invention provides a method of producing fish cake-chicken crackers which comprise crackers containing surimi and chicken meat as main ingredients, and a sauce mixed with the crackers, wherein the crackers are produced by the following steps: a cracker material preparation step in which a main ingredient and supplementary ingredients are prepared, wherein the main ingredient contains 65-75 parts by weight of chicken meat mixed with respect to 100 parts by weight of surimi, whereas the supplementary ingredients are refined salt, phosphates, a nucleic acid seasoning, a seasoning liquor, white sugar, glycine, garlic, ground pepper, soy sauce for stir-fry, butter powder, sesame oil, egg whites, potato starch, soybean oil, mayonnaise, and walnuts a cracker material mixing step in which the defrosted surimi is placed in a slowly rotating cutter, the cutter is driven at high speed for 8-12 minutes to defrost the same, ½ of the refined salt is introduced therein, the cutter is driven at high speed for 2-3 minutes to perform a primary grinding, the rest of the refined salt is introduced, the cutter is driven for 20-30 minutes, the supplementary ingredients excluding the walnuts are sequentially introduced therein, the walnuts are finally introduced therein, and the ingredients are mixed to prepare a cracker dough a molding step in which the prepared cracker dough is molded a frying step in which the molded cracker dough is fried at an oil temperature of 150-155°C for 3-4 minutes to produce crackers, and oils on the cracker surface are removed a cracker cooling step in which the produced crackers are cooled in a cooler at 9-11°C for 50-55 minutes and a packing step in which a fixed number of crackers are packed in units.COPYRIG
