PROBLEM TO BE SOLVED: To provide a rice gruel-molding agent for production of food which gives an eater satisfactory feeling in appearance and palate feeling while improving eating/swallowing suitability of rice gruel: and to provide a method for preparing rice gruel molded so as to be easily swallowed.SOLUTION: The rice gruel-molding agent includes amylase and native gellan gum. The method for preparing rice gruel includes adding a prescribed amount of amylase and native gellan gum to 100 g of rice gruel, stirring the material to be homogenized, and thereafter molding the rice gruel into a Sushi rice shape, such as a barrel shape.
