A noodle product containing the meat of poultry is provided to improve the quality of meat, the taste and the smell by using the egg collected from the poultry bred by using chitosan. A noodle product containing the meat of poultry is prepared by mixing 100 parts by weight of a wheat flour or a rice flour, 10-90 parts by weight of the meat of poultry which is bred by feeding a chitosan aqueous solution, 5-15 parts by weight of the egg of the poultry which is bred by feeding a chitosan aqueous solution, and 3-5 parts by weight of salt； pasting the mixture； molding the pasted one； and drying the molded one.본 발명은 키토산 수용액을 이용하여 사육된 가금류로부터 얻은 가금육과 알을 사용한 신규한 면류에 관한 것으로, 키토산 수용액을 가금류에 급이하여 사육하고 상기와 같이 사육된 가금류의 육질과 알을 밀가루와 일정 비율로 혼합하여 반죽한 뒤 면류로 성형하고 건조시켜 면류를 제조함으로써 식감, 맛, 향이 개선된 신규한 기능성 면류를 제공할 수 있는 뛰어난 효과가 있다.
