The present invention relates to a preparation method of a chestnut extract in which extraction is performed with both the fruit and the pellicle of a chestnut to produce a chestnut extract; and to a chestnut extract beverage comprising 0.05 wt% of an artificial flavorant, and 0.05 wt% of complex Scutellaria baicalensis extract, which is a natural preservative, with respect to 99.9 wt% of the chestnut extract. A chestnut extract of the present invention is prepared through the method comprising the following steps. The hardshell of a chestnut is peeled, and the fruit of the chestnut is sliced to a certain thickness, before being dried, steamed, then roasted at a temperature of 100-140°;C. The processed chestnut slices are slowly stirred at a temperature of 30°;C or less, after which sediments therein are removed using a filter or a strainer to produce an extract. The extract is then sterilized by being boiled at a temperature of 100°;C or more for 5 minutes, and sodium hydrogen carbonate is added thereto to adjust the pH of the extract to the neutral range.본 발명은 밤의 내피와 속살을 함께 추출하여 밤 추출액을 제조하는 방법 및 이렇게 제조된 밤 추출액 99.9중량%에 대해 혼합차향 0.05중량% 및 천연보존제인 복합황금추출물 0.05중량%으로 구성되는 밤 추출 음료에 대한 것으로서, 본 발명의 밤 추출액은 알밤의 외피를 탈피하고, 소정의 두께로 절편하여 건조한 후 스팀에 찌고 100-140℃의 온도에서 로스팅한 다음, 30℃ 이하의 온도에서 저속으로 교반한 후 침전물을 필터 또는 체를 이용해 제거하고, 100℃ 이상의 온도에서 5분간 끓여 살균한 다음, 탄산수소나트륨을 첨가하여 추출액 pH를 중성으로 조절하는 것으로 구성된 방법에 의해 제조된다.
