The present invention provides seaweed noodles and a method for manufacturing the same. The method includes a first step, a second step, a third step, and a fourth step. In the first step, wet and fresh brown seaweeds or wet and fresh kelps are ground, or dried seaweeds are soaked in hot water to recover their original shapes the seaweeds are reacted so as to make alginate be released from the seaweeds, thereby, a seaweed solution of the brown seaweeds and the kelps is obtained. In the second step, wheat flour, purified water, and brine are added into the seaweed solution so as to produce dough then, the dough is aged. In the third step, the aged dough is passed between rolling rollers so as to make a dough sheet of the seaweed the dough sheet is made into the seaweed noodles in the shape of seaweeds by a slitter. In the fourth step, the seaweed noodles in the shape of kelps or brown seaweeds are cut to have predetermined sizes then the seaweed noodles are dried. The noodles contain the kelps or brown seaweeds, have the color and the shape of seaweeds, and thus are natural and ecofriendly. The noodles are similar to kelps and brown seaweeds, and thus provide a soft texture when cooked.COPYRIGHT KIPO 2014본 발명은 생미역이나 생다시마의 해조류를 습식으로 분쇄하거나 또는 건조된 해조류를 온수에 넣고 복원시킨 후, 알긴산이 용출되도록 반응시켜 미역이나 다시마의 해조류용액을 만드는 제 1단계와, 상기의 해조류용액에 밀가루와 정제수 및 염수를 넣고 반죽하여 숙성하는 제 2단계와, 숙성된 반죽물을 압연롤라를 통과시켜 해조류 생지 면대를 만든후, 절출기를 이용하여 해조류형상의 해조면을 만드는 제 3단계와, 다시마 또는 미역 모양과 형태의 해조면을 규격별로 절단하여 건조하는 제 4단계로 구성된다.본 발명은 다시마 또는 미역이 면에 첨가되어 해조류의 색갈과 형태를 띄게 되어 자연스럽고 환경친화적이며, 다시마 또는 미역과 닮아서 조리시 부드러운 해조류의 느낌을 주는 맛있는 해조면을 제공한다.
